📋 Healthy Apple Crumble
This healthy apple crumble is decadent enough as dessert and yet wholesome enough to be breakfast! Made with whole foods like apples, oats and almond flour, this recipe contains no added sugar and is dairy-free, gluten-free and vegan.

Ingredients

  • 2 apples - for the apple

  • 2 tsp lemon juice - for the apple

  • 1 tbsp monk fruit erythritol sweetener - for the apple

  • 40ml water - for the apple

  • 2 tsp cornstarch - for the apple

  • 1/2 tsp cinnamon - for the apple

  • 1/4 tsp allspice - for the apple

  • Pinch of salt - for the apple

  • 40g rolled oats - for the crumble

  • 20g almond flour - for the crumble

  • 20g coconut oil - for the crumble

  • 1/2 tsp cinnamon - for the crumble

  • 1 tbsp monk fruit erythritol sweetener - for the crumble

  • Sugar-free vanilla ice cream - for the to serve

Instructions

  1. Preheat oven to 350°F / 180°C.

  2. Small dice apples.

  3. In a mixing bowl, combine diced apples, monkfruit erythritol sweetener, water, cornstarch, cinnamon, allspice and salt.

  4. In another mixing bowl, make the crumble by combining rolled oats, almond flour, coconut oil, cinnamon and monkfruit erythritol sweetener.

  5. Transfer apple mixture to two lightly greased ramekins. Top with crumble mixture.

  6. Bake for 30-40 minutes or until the crumble is golden and apples are tender.

  7. Serve warm with vanilla ice cream or natural Greek yogurt.

Notes

  • You can use any variety of apples for this, but note that if you use green apples you might need to add more sweetener as they tend to be more tart.
  • I did not peel the apples as the skin is very nutritious but you may peel them before dicing if you prefer a smoother texture.
  • Feel free to substitute monkfruit erythritol sweetener with any other sweetener of choice.
  • I served this with a sugar-free vanilla ice cream. You may substitute with natural Greek yogurt, coconut yogurt or vegan ice cream to suit your dietary needs.
