📋 Banana Oatmeal Pancakes
Pancakes made right in the blender and ready in less than 20 minutes! These banana oat pancakes are made with wholesome ingredients and naturally sweetened. Fluffy, delicious and so much healthier than regular pancakes!

Ingredients

  • 1 banana - for the pancakes

  • 60g rolled oats - for the pancakes

  • 120ml milk - for the pancakes

  • 1 egg - for the pancakes

  • 1 tsp baking powder - for the pancakes

  • 1 tsp vanilla extract - for the pancakes

  • Pinch of salt - for the pancakes

  • 1/4 tsp oil - for the pancakes

  • 1-2 tbsp sugar-free maple syrup - for the toppings

  • 1 banana, sliced - for the toppings

Instructions

  1. Place all ingredients for the pancakes in a blender. Blend until smooth. Let batter rest for 5 minutes to thicken.

  2. Heat up a nonstick skillet over medium-low heat. Grease the skillet with a little bit of oil using a paper towel. Spoon 1/4 of the batter onto the skillet. Cook for 2 minutes on each side. Repeat with the rest of the batter.

  3. Plate up your pancakes and top with sliced banana and maple syrup. Enjoy!

Notes

  • Feel free to omit or substitute the sugar-free maple syrup with any other sweetener or syrup of choice as topping. The pancakes are already quite sweet from the bananas so you can get away without sweetening them further.
  • Go crazy with toppings! Other suggestions are fresh berries, chopped nuts, shredded coconut, Greek yogurt, your favorite nut butter, etc.
