No Bake Energy Balls

Ingredients

  • 1 1/2 cups whole rolled oats
  • 1 cup creamy natural peanut butter
  • 1/4 cup ground flaxseed
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1/4 cup mini chocolate chips
  • 2 tbsp chopped peanuts
  • 2 tbsp unsweetened shredded coconut
  • Pinch sea salt (if the PB is unsalted)

Method

  1. In a large bowl, combine oats, peanut butter, flaxseed, honey, vanilla, chocolate chips, peanuts, and coconut. Add a pinch of salt if the PB is unsalted. Mix until evenly combined - the mixture will be thick.
  2. Use a 2-tbsp cookie scoop to portion, then roll into balls with your hands.
  3. Place on a large plate or baking sheet. Chill in the fridge 1-2 hours until firm.
  4. Keep in an airtight container in the fridge up to 1 week. Also freeze well.

Tweaks

  • Smaller balls
  • Refrigerate = firming
