Ingredients
- 1 1/2 cups whole rolled oats
- 1 cup creamy natural peanut butter
- 1/4 cup ground flaxseed
- 1/4 cup honey
- 1 tsp vanilla extract
- 1/4 cup mini chocolate chips
- 2 tbsp chopped peanuts
- 2 tbsp unsweetened shredded coconut
- Pinch sea salt (if the PB is unsalted)
Method
- In a large bowl, combine oats, peanut butter, flaxseed, honey, vanilla, chocolate chips, peanuts, and coconut. Add a pinch of salt if the PB is unsalted. Mix until evenly combined - the mixture will be thick.
- Use a 2-tbsp cookie scoop to portion, then roll into balls with your hands.
- Place on a large plate or baking sheet. Chill in the fridge 1-2 hours until firm.
- Keep in an airtight container in the fridge up to 1 week. Also freeze well.
